R\u00e9server.<\/li><li>\u00d4ter les pieds des champignons, \u00e9mincer grossi\u00e8rement le reste et <\/li><li>Faire revenir avec l\u2019oignon et l\u2019ail \u00e9minc\u00e9s finement dans un peu d\u2019huile,<br>poivrer. R\u00e9server. <\/li><li>Fouetter les oeufs avec la cr\u00e8me et une pinc\u00e9e de sel. <\/li><li>Les rendre les plus mousseux possible (c\u2019est le secret de la m\u00e8re Poulard).<\/li><li>Verser dans une po\u00eale tr\u00e8s chaude un peu grasse.
