{"id":1643,"date":"2021-06-30T00:52:22","date_gmt":"2021-06-29T22:52:22","guid":{"rendered":"http:\/\/lesbiopaniersdemareil.org\/?p=1643"},"modified":"2021-06-30T00:52:59","modified_gmt":"2021-06-29T22:52:59","slug":"recette-de-chou-pointu-marine-et-epices-crunchy","status":"publish","type":"post","link":"https:\/\/lesbiopaniersdemareil.org\/index.php\/2021\/06\/30\/recette-de-chou-pointu-marine-et-epices-crunchy\/","title":{"rendered":"Recette de chou pointu marin\u00e9 et \u00e9pices crunchy"},"content":{"rendered":"\n<p><strong>Ingr\u00e9dients <\/strong>( pour 4 \u00e0  6 personnes) :<\/p>\n\n\n\n<p>Un 1\/2 chou pointu<\/p>\n\n\n\n<p><strong>Marinade :<\/strong><\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container\">\n<ul><li>30 cl de vinaigre de riz (ou de cidre)<\/li><li>3 cs de cassonade (sucre roux)<\/li><li>1\/2 cs sel<\/li><\/ul>\n\n\n\n<p>M\u00e9langer tous les ingr\u00e9dients et laisser reposer 20 mn<\/p>\n<\/div><\/div>\n\n\n\n<p><br><strong>Vinaigrette :<\/strong><\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container\">\n<ul><li>2 cs nuoc-m\u00e2n <\/li><li>1 cs d\u2019huile neutre (p\u00e9pin raisin par exemple, sinon tournesol) <\/li><li>1 cc sauce soja<\/li><\/ul>\n<\/div><\/div>\n\n\n\n<p><strong>Epices et autres :<\/strong><br>&#8211; 100g noisettes concass\u00e9es (pilon)<br>&#8211; 30g graines de s\u00e9same<br>&#8211; 1 cc de carvi (ou cumin)<br>&#8211; 1 cc de fenouil (ou anis vert)<br>&#8211; 2 cc de graines de coriandre<br>&#8211; poivre et 1 pinc\u00e9e de sel.<\/p>\n\n\n\n<p><strong>Pr\u00e9paration  :<\/strong><\/p>\n\n\n\n<p>Emincer le chou en julienne tr\u00e8s fine. Mettre dans un saladier, recouvrir avec la<br>marinade (vinaigre+sucre+sel) et un peu d\u2019eau (le chou doit \u00eatre couvert). Laisser<br>mariner au moins 1h minimum, puis essorer le chou \u00e0 la main, en faisant bien<br>d\u00e9gorger.<br>Pr\u00e9parer le vinaigrette dans le fond d\u2019un saladier, y d\u00e9poser le chou mariner, bien<br>m\u00e9langer.<br>R\u00e9server au frais.<br>Pr\u00e9parer le m\u00e9lange d\u2019\u00e9pices : faire griller les noisettes, retirer du feu d\u00e8s que les<br>ar\u00f4mes s\u2019\u00e9chappent. Laisser refroidir et concasser grossi\u00e8rement avec un<br>mortier\/pilon.<br>Dans un po\u00eale chaude, faire griller le s\u00e9same, la coriandre, le carvi et le fenouil. Ils ne<br>doivent pas br\u00fbler, juste d\u00e9gager leurs ar\u00f4mes. Laisser refroidir et mixer (avec un<br>moulin par exemple).
